This leaves the tomato with 2.39% of its original nutrient content.

Green harvesting--which allows for long distance transport and for fruit and vegetables to be stored for lengthy periods--has created a comprehensive problem in maintaining good health:  When a food is not ripened on the tree or vine the 8 essential sugars/polysaccharides which are prolifically formed in the last stage of ripening on the vine--and lasting only 48 hours after picking—have been reduced to essentially 2 of the essential sugars left in the products.
